Gone Fishin'
I have said this before, and I will say it again, I do not know how I gave birth to such "boys." What I mean is that they are both all boy, they love the great outdoors, worms, bugs, critters, mud, and fishing. Or as they love to call it "fishin'." Before our summer break began the boys named several activities they wanted to do this summer and at the top of the list, fishing!



Saturday morning, we went to a local park where they stock the pond with fish. We knew our chances of actually catching a fish were pretty good. And I would say so, we caught fish, after fish, after fish. Holden was the first out of the four of us to catch a fish.
Then, he helped Rylan catch his first fish!

Oh my gracious, he was beyond excited! He was screaming, yelling, and telling everyone he caught a fish. We had to remind the kids this is suppose to be a peaceful and quite activity...yeah no such luck with these two! With every fish they caught they screamed it at the top of their lungs, "Look Momma, I caught a fish. Take a picture!" Thankfully, the boys did not seem to care about the size of the fish because look at these tiny Blue Gills. Cute! 
At one point both boys caught fish at the same time!

This particular pond is a catch and release pond and the boys took turns throwing the fish back in. That was part of the excitement of the day. Who got to throw the fish back in.


After 3 hours of fishing, yes, I can not believe they lasted that long either, we called it a day. The boys could not stop talking about how many fish they each caught. I am sure we will be hearing these fish tales for weeks to come. Holden and Rylan are already asking when can we go again, which I am sure we will soon. Our day of fishing was a success! One more activity we can cross off our "Summer of Fun List!" Let's see, how many more to go?!

Rainbows Everywhere!
Several weeks ago I saw a recipe online for rainbow waffles. After last weeks watermelon waffles, I knew just had to make them. All you do is divide the batter into six separate bowls, then add food coloring to make red, orange, yellow, green, blue and purple. Spoon each batter color into the waffle iron to make a rainbow. Now, mine are not perfect and I used a little too much red and orange, next time I will know not to use as much. But even though the waffles did not turn out perfect, I knew the boys would enjoy the surprise.
Add some whip cream for clouds and there you have it, an easy rainbow breakfast.
As I expected, the boys loved them! I wish I could take credit for thinking of these cute waffles but I can not. This breakfast creation sparked a list of different waffles Holden and Rylan want me to try make in the next couple of weeks. Some of their ideas were really creative, I just hope I can make them as they in vision them. 
As the sun was setting tonight I noticed out the window a faint but existent rainbow in the sky. What a coincidence! Rainbows this morning for breakfast and then ending the day with a rainbow in the sky. Rainbows seem to be popping up everywhere around us.

What to do with ALL those strawberries...
16 pounds of strawberries! What was I thinking! After cooking, baking, canning, and freezing here is what I have made so far with all those strawberries...
I canned Strawberry and Strawberry Chipotle jam,
Strawberry Bread,
Strawberry Salad with candied pecans and feta, dressed with Strawberry vinaigrette,
and Strawberry Ice Cream!!!
I froze the remaindered of strawberries in 2 cup increments for future baking. 16 cups to be exact! Any ideas? I was thinking Strawberry Cake and muffins. Oh, the possibilities! I guess I need to get back to baking!

Strawberries, Strawberries, Strawberries
Well, the title says it all...Strawberries, Strawberries, Strawberries!!! I have been checking several local farms websites for U-pick strawberries the last couple of weeks. But they were all predicting a less than favorable crop. Then Friday, I read that several were not going to have a U-pick crops this year! UGGG!! I was so bummed! Then I decided to call a farm we visited for blackberries last year to see if they had strawberries. Luckily, they did!! Our Saturday plans were in place! Early Saturday morning we packed up and visited Stokes Farm for a little strawberry picking.
In the car we were all going back and forth about who was going to collect the most strawberries. Holden was determined to win...go figure! As soon as we gathered our flats and quarts we were off and picking. Much to our surprise, the crop was abundant and plentiful with strawberries. Just look at these red beauties!

Absolutely prefect! As is Stokes Farm! It is absolutely gorgeous! I just love all the wide open fields filled with various crops.
The boys gathered, gathered and gathered berries. Holden took his picking very seriously! 


And just look at these chubby little hands gathering strawberries.
Precious! Rylan seemed to eat more than he actually placed in his quart, I guess he was just making sure they were ripe for us. 

After picking for about 45 minutes we called it a day. 
But not before the boys sat on the farms John Deere Gator.
It just would not be right to visit a farm and not sit on a tractor or something, now would it.

You will never believe how much we pick between the four of us! 16 POUNDS!!!! WOW!!! I think this years strawberry picking is a record for us! Yikes! Now, I have to get to cooking, baking and canning these strawberries!
Sunshine, warm temperatures, time together, and memories with the boys gathering their own fresh fruit from a farm. These are just a few of our simple summer pleasures we enjoy the most.
Welcome to Summer continues...
It seems like our "Welcome to Summer Break" just keeps going on and on. Friday, Holden and Rylan begged for us to do the fire pit all day. Well, you know I gave in. Since it was such a beautiful night, we grilled and ate dinner outside too. Why not we are on summer break! 
Just another love of summer...eating outside! Less crumbs for Momma to clean up! Since we were still celebrating the beginning of summer break, we had to have some special drinks. 
After dinner we roasted marshmallows,
made s'mores,
(wonder which little munchkin took a bite of the chocolate?!) and finished off the night with some fireworks. 

It really was a celebration!!
Can you see we are just a little excited about summer!!!
